From the street, there’s only a pair of tall timber doors in Santanyí. Behind them is an adults-only hotel in restored buildings from the 1600s, with a long garden pool lined by olive trees and cypress. Breakfast is served in the old wine cellar, where one of the stone arches still carries centuries-old graffiti. Even when the town is quiet out of season, the hotel is reason enough to go.
